Easy Cheesy Scalloped Potatoes

Have you ever had the opportunity to try Scalloped Potatoes? This cheesy deliciousness will brighten your day and leave you wanting more!

Ingredients:
  • 6-8 medium Russet potatoes
  • 1/4 onion, minced
  • 3 cups of shredded cheese
  • pinch of parsley
  • 3 cups of milk
  • 3 Tablespoons of flour
  • 3 Tablespoons of butter
  • pinch of ground mustard
  • salt and pepper
Instructions:
  1. Wash and slice potatoes
  2. Butter a meal-sized casserole dish
  3. Place a layer of potatoes on the bottom of the dish. Sprinkle onion, salt, and pepper on top
  4. Repeat until all of the potatoes have been used 
  5. Melt the butter in a medium saucepan 
  6. Stir in flour until incorporated
  7. Stir in the milk until smooth
  8. Add the ground mustard 
  9. Simmer until mixture thickens and coats the back of the spoon
  10. Add shredded cheese and stir, using a figure eight pattern, until cheese is all incorporated
  11. Pour cheese mixture over the layered potatoes. Be sure that the sauce goes over the sides and down the corners. Top with parsley 
  12. Bake for 50-60 minutes at 375 degrees, until knife potatoes are tender
  13. Let sit 10 minutes before serving 
  14. Then, devour!!
For a bit of sparkle, you can top your dish with extra cheese, bread crumbs, Panko, crushed crackers, herbs just to name a few!
