Easy Cheesy Scalloped Potatoes
Have you ever had the opportunity to try Scalloped Potatoes? This cheesy deliciousness will brighten your day and leave you wanting more!
Ingredients:

- 6-8 medium Russet potatoes
- 1/4 onion, minced
- 3 cups of shredded cheese
- pinch of parsley
- 3 cups of milk
- 3 Tablespoons of flour
- 3 Tablespoons of butter
- pinch of ground mustard
- salt and pepper
Instructions:
- Wash and slice potatoes
- Butter a meal-sized casserole dish
- Place a layer of potatoes on the bottom of the dish. Sprinkle onion, salt, and pepper on top
- Repeat until all of the potatoes have been used
- Melt the butter in a medium saucepan
- Stir in flour until incorporated
- Stir in the milk until smooth
- Add the ground mustard
- Simmer until mixture thickens and coats the back of the spoon
- Add shredded cheese and stir, using a figure eight pattern, until cheese is all incorporated
- Pour cheese mixture over the layered potatoes. Be sure that the sauce goes over the sides and down the corners. Top with parsley
- Bake for 50-60 minutes at 375 degrees, until knife potatoes are tender
- Let sit 10 minutes before serving
- Then, devour!!
For a bit of sparkle, you can top your dish with extra cheese, bread crumbs, Panko, crushed crackers, herbs just to name a few!
