How to Hard Cook Eggs


Hard-cooked eggs (aka. hard-boiled eggs) are not only full of healthy vitamins and nutrients, but are delicious, as well.  On their own they're portable and make great protein packed snacks.  These simple-to-make eggs can be used in many ways, whether it be to make deviled eggs or dress up a salad or sandwich.  This post walks you through the steps of making perfect hard-cooked eggs. 






  
Instructions: 

  • Cover with cold water until water reaches 1 inch above the top of the eggs.
  • Add a sprinkle of salt to the water.



  • Cover pot and turn heat to high. 
  • When the water boils, turn off the stove. Let eggs sit in hot water for 12-15 minutes.



  •  While the eggs are sitting in the hot water, prepare a bath of ice water.  
 

  • Place eggs quickly into an ice bath, being careful not to crack them. 
  • Let chill completely.
  • Remove from water and store in the refrigerator.
  • Peel and rinse the eggs before eating
  • Enjoy! 



Tips and Tricks:

  • Salt helps the water to boil faster and helps the whites of the broken eggs to coagulate more quickly.
  • Egg yolks contain iron, and egg whites contain sulfur. If an egg is cooked too long, the iron and sulfur combine to make ferrous sulfide and hydrogen sulfide gas.  This results in a grayish-green, stinky yolk. It's safe to eat, but looks unappetizing.
  • Why cooked and not boiled? Hard-boiled eggs are cooked in boiling water the entire time, while when making hard-cooked eggs you bring the water to a boil and then turn off the heat.
