Sweet and Spicy Jalapeno Poppers

Ingredients:
- 8 jalapenos
- 4 oz. softened cream cheese
- 1 cup shredded cheddar and/or Colby jack cheese
- 1 small apple
- 1/4 cup onion
- 8 slices bacon
- brown sugar
Instructions:
- Rinse the jalapenos.
- With gloves, cut off the top of the pepper.
- Cut each pepper in half lengthwise and scoop out all of the seeds.
- Dice apple and onion and place in a medium sized bowl.
- Stir in softened cream cheese and shredded cheese. Mix well.
- Line a baking tray with parchment paper.
- Use a butter knife to spread cheesy filling into each pepper half and place on tray.
- Cut each bacon slice in half.
- Stretch as much as the bacon will allow (without tearing it).
- Wrap each pepper in a piece of bacon and secure with a toothpick on each end.
- Sprinkle with brown sugar.
- Bake at 375 degrees F. for 40 minutes or until the bacon is crispy.

Tips and Tricks:
- Make sure to always use sturdy gloves when handling jalapenos to avoid being burned by the pepper's capsaicin. Even though you won't feel a burn at first, later you will face the consequences.
- When handling jalapenos, do not touch your face. The sensitive skin there can easily be burned.
- The apple provides a sweetness to the poppers' spicy. If you are a fan of hot, then simply leave the apple out or reduce the amount of it.
- For a cute holiday treat, wrap a small piece of bacon around the middle of the jalapeno popper to create a "bow":
